When people search for a 5 star restaurant in Jaipur they are usually comparing against hotel restaurants, because that is where the five star label formally lives. A hotel earns five stars on rooms, spa, gym and concierge. The restaurant inherits the rating. So what you are actually shopping for is the service standard the label implies, not the label.

Nouba is inside The Liv Hotel in C-Scheme, and the service standard is built to that expectation: staff trained in anticipatory service, water refilled unprompted, courses paced to the table, preferences carried between visits. What is different is the room. Instead of a formal hotel dining room with low ceilings and a carpet, you are on the 4th floor, open to the sky, beside a pool, with a resident DJ in the evenings.

For a lot of guests that trade is the entire point. Five star hotel restaurants are excellent and also somewhat solemn. A birthday dinner, an anniversary, a group of friends who want to eat well and then stay for another hour, none of that suits a silent dining room. The rooftop does.

On the food, Nouba runs three kitchens independently rather than one kitchen attempting three menus. There is a North Indian section, a Pan-Asian line with a sushi and dim sum counter, and a Neapolitan wood-fired oven above 400 degrees. That structure is what allows a table to order across all three cuisines at once without service falling apart, which is the practical test of a kitchen at this level.

A note on the phrase itself, because honesty is worth more than a keyword. Nouba is not a government rated five star establishment, and no restaurant should imply one it does not hold. What it offers is the service standard and kitchen capability people mean when they search for it, in a rooftop setting rather than a hotel dining room. Elle India and Conde Nast Traveller have both featured the space.
