Nouba is on the 4th floor, which matters more than it sounds. You take a lift up, the ceiling opens to sky, and the city drops away below the railing. There is a pool on the level. In the evening the lighting warms, the resident DJ starts, and the room shifts from restaurant to something closer to a rooftop lounge. Elle India and Conde Nast Traveller have both featured the space, and the electric blue design is the thing most people photograph first.

The practical version of fancy is this: it is somewhere you would be glad you dressed up for, somewhere you would take a photograph without being asked, and somewhere the person you brought is quietly impressed before the food arrives. That is what the rooftop does. The food then has to hold up, which is why there are three kitchens rather than one.

For date night specifically, ask for a railing table when you book. They face the skyline, they are quieter than the centre of the floor, and they photograph considerably better after sunset. There is no surcharge, but there are only so many of them, and on Friday and Saturday they are typically gone by 7 PM.
